A category exists in the taxonomy before it has a single listing in it. That is deliberate. The classification is decided once, from how people actually search and what schema type the businesses need, and then filled in town by town. So a category on this page with a zero next to it is not a mistake. It is a slot we have defined and not populated yet.
Open a category and you get the part that matters: exactly which towns in New South Wales and Victoria it is live in, how many businesses are behind each one, and which of them cross the border to work. 195 of the 214 categories here have reached that point so far.
Trades and services
Licensed trades, checked against the state registers.
Eat and drink
Cafes, bakeries, restaurants and takeaway.

How the taxonomy works
What is a vertical?
A vertical is the top level of the taxonomy. There are 6 of them: trades and services, eat and drink, pubs and clubs, stay, things to do, clubs and hobbies. Categories sit inside one vertical each, and the vertical decides the page template, the filters that make sense and the schema.org type the listings are marked up with.
Why do a pub and a plumber need different templates?
Because almost nothing useful about them is the same. A plumber has a service area, a licence number you can check against a state register and a call out fee. A pub has a kitchen, opening hours that matter down to the minute, a beer garden and a courtesy bus. Forcing both into one generic business card means neither page answers the question that brought someone to it, and the structured data ends up as LocalBusiness for everything, which tells a search engine nothing.
How do I suggest a category that is missing?
Send it through the contact form with an example of two or three businesses that would sit in it. A new category gets added when it has a distinct schema type, a distinct set of questions buyers ask, and enough real businesses in the border corridor to fill more than one town. Adding an empty category to look bigger is how directories end up with thousands of pages nobody wants.
